Single woodblock printed broadside (415x160mm), verso blank, Twenty-one monochrome panels, seven illustrated. Edges lightly soiled, a few small marks and stains, faint creases and folds, a few faint smudges, very small closed tear to right margin. Complete.
¶ An early Edo-period culinary broadside, combining instructions for mukimono—the decorative carving of vegetables—with seasonal rice dishes and references to other fashionable culinary specialities. The right-hand section describes twenty-one vegetable-carving designs, including peony, camellia, peach, plum, cherry and bellflower forms, with particularly striking instructions for wachigai daikon, a whole daikon carved into an unbroken chain of linked rings. Such elaborate vegetable carving was a valued accomplishment in Edo-period kitchens, and wachigai daikon appears in contemporary cookery literature from the 1780s. The remainder gives ten seasonal rice preparations and notices of dishes including carp sashimi, decorative egg-work and “hundred-colour” tofu. Its contents closely reflect the hyakuchinmono and ryōri himitsubako genre of single-subject cookery books that flourished from the 1780s, suggesting that the sheet may have served a promotional or commercial purpose. Rare. A remarkable survival of Edo culinary ephemera, linking the contemporary culture of cookery publishing with the development of printed food advertising. § Unrecorded Item #11469
